Apple and Bacon Coleslaw

Ingredients (Serves 4):

  • 4 lean bacon rashers, cut into strips

  • 1 red cabbage, finely shredded

  • 1 green cabbage, finely shredded

  • 1 granny smith apple, sliced

  • 1/3 cup Beerenberg Ranch Dressing

  • 1/3 cup sultanas

  • 1/3 cup walnuts

  • 2 tsp Beerenberg Bavarian Mustard

  • Continental parsley, to garnish

 

Method:

  1. Cook bacon in a non-stick frypan until crisp, drain well and cool.

  2. Combine bacon with the remaining ingredients in a bowl and mix well. Chill.

  3. Garnish with sprigs of continental parsley. Serve immediately.
