Apple & Cinnamon Cake

Ingredients (Serves 8-10):

  • 2 granny smith apples, peeled, cored, cut into eighths

  • 1 cup sugar

  • 1  tsp ground cinnamon

  • 4 eggs

  • 1 tsp vanilla extract

  • 150ml Beerenberg Extra Virgin Olive Oil

  • 1 3/4 cups self-raising flour, sifted

  • Icing Sugar, sifted, to dust

 

Method:

  1. Preheat oven to 180C/160C fan-forced. Lightly oil a 22cm (base measurement) springform pan. Line with baking paper. Place apples, 2 tablespoons of the sugar and cinnamon in a bowl. Toss well to coat.

  2. Using an electric mixer, beat eggs, vanilla and remaining sugar for 5 minutes until thick and fluffy. Gradually add oil alternately with the flour, beating on Low to combine after each addition.

  3. Pour batter into prepared pan. Arrange apples over top. Bake for 50-55 minutes until cooked when tested with a skewer. Cool for 10 minutes before removing from the pan. Serve warm, dusted with icing sugar, if you like.
