Apple, Walnut & Cinnamon Muffins

Ingredients (Makes 12):

  • 2 cups self-raising flour

  • 2 tsp baking powder

  • 1 tsp bicarbonate of soda

  • 1/2 cup oat bran

  • 1 cup Beerenberg Apple Sauce

  • 1 egg, lightly beaten

  • 1/2 cup skim milk

  • 1/3 cup maple syrup

  • 3/4 cup dried apples, chopped

  • 1/2 cup walnuts, chopped

  • 1/4 cup raw sugar

  • 2 tsp cinnamon

  • 1 tbs canola oil

 

Method:

  1. Preheat oven to 180C.

  2. Prepare a 12-hole muffin tin with papers.

  3. Sift flour, baking powder and soda in a medium bowl. Stir through oat bran. Make a well in the centre.

  4. Using a large fork, stir in combined apple sauce, oil, egg, skim milk, maple syrup, apples, walnuts, raw sugar and cinnamon until the mixture is just combined.

  5. Spoon mixture into prepared tin. Bake 25-30 minutes until golden brown and cooked through.

  6. Stand 5 minutes before turning muffins onto wire rack to cool.
