Beerenberg Baked Barramundi

Ingredients:

  • 1 whole barra

  • 1/2 bunch coriander

  • 1 lemon

  • 2 tbs peanut oil

  • Beerenberg Sweet Chilli Relish


Method:

  1. Make three long diagonal cuts on each side of the fish.

  2. On a large double sheet of foil lay out 3/4 of the lemon; cut into thin rounds and cover with the coriander.

  3. Rub the Sweet Chilli Relish (as much or as little as you like) into the cuts and rest of the flesh.

  4. Lay the fish on top of the coriander and place any remaining lemon or coriander in the cavity.

  5. Drizzle the oil over the fish and bake in a moderate oven. Time required will depend on the size of the fish.
