Chickpea Bean Salad

Ingredients (Serves 6):

  • 4 cups canned chickpeas, drained and rinsed

  • 1/3 cup fresh coriander, chopped

  • 2 tbs extra fresh coriander, chopped

  • 2 chopped mild green chillies

  • 1/4 cup natural yoghurt

  • 1/4 cup chopped onion

  • 2 tbs Beerenberg Extra Virgin Olive Oil

  • 3 tsp Beerenberg Crushed Garlic

  • 1 1/2 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp fresh lemon juice

  • 1/4 tsp turmeric

 

Method:

  1. Combine all of the ingredients in a medium bowl. Season to taste with salt and pepper. Garnish with extra chopped coriander.
