Chickpea Bean Salad
Ingredients (Serves 6):
4 cups canned chickpeas, drained and rinsed
1/3 cup fresh coriander, chopped
2 tbs extra fresh coriander, chopped
2 chopped mild green chillies
1/4 cup natural yoghurt
1/4 cup chopped onion
2 tbs Beerenberg Extra Virgin Olive Oil
3 tsp Beerenberg Crushed Garlic
1 1/2 tsp ground cumin
1 tsp ground coriander
1 tsp fresh lemon juice
1/4 tsp turmeric
Method:
Combine all of the ingredients in a medium bowl. Season to taste with salt and pepper. Garnish with extra chopped coriander.
