Crispy Potatoes

Ingredients (Serves 2):

  • 4 small new potatoes

  • 1/4 cup finely grated Parmesan

  • 1/4 cup (60ml) Beerenberg Extra Virgin Olive Oil

  • 1 tsp finely grated lemon rind

  • 1 tsp Beerenberg Crushed Garlic

 

Method:

  1. Preheat the oven to 220C.

  2. Place potatoes in cold salted water, bring o boil and cook for about 15 minutes until tender. Drain and allow to cool slightly.

    Place potatoes on a well oiled baking sheet and flatten with the palm of your hand (or a fork or potato masher). Sprinkle with Parmesan, oil, salt and pepper. Roast for 25 minutes until crispy.

  3. While potatoes are roasting, combine rind and Beerenberg Crushed Garlic in a small bowl. Sprinkle over cooked potatoes before serving.
