Glazed Pork Fillets
Ingredients:
500g pork fillets
1 onion
2 tsp grated fresh ginger
60g butter
1 tbs lemon juice
2 tbs Beerenberg Apricot Jam
2 tbs light soy sauce
2 tsp curry powder
Method:
Melt the butter in a pan. Add all the ingredients, except the pork, and stir over low heat, until the jam is melted.
Place pork in greased, shallow oven-proof dish in a single layer. Pour the sauce over the top and bake, uncovered, in a moderate oven for about 25 minutes, or until pork is tender.
