Glazed Pork Fillets

Ingredients:

  • 500g pork fillets

  • 1 onion

  • 2 tsp grated fresh ginger

  • 60g butter

  • 1 tbs lemon juice

  • 2 tbs Beerenberg Apricot Jam

  • 2 tbs light soy sauce

  • 2 tsp curry powder


Method:

  1. Melt the butter in a pan. Add all the ingredients, except the pork, and stir over low heat, until the jam is melted.

  2. Place pork in greased, shallow oven-proof dish in a single layer. Pour the sauce over the top and bake, uncovered, in a moderate oven for about 25 minutes, or until pork is tender.
