Grilled Salmon with Strawberry Salsa
Ingredients:
6 Salmon or Ocean Trout steaks
Salsa
1 Lebanese Cucumber, finely diced
1 Spanish Red Onion, finely diced
1 tbs Coriander, finely chopped
3 tbs Rice Wine Vinegar
yellow Pepper, finely diced
red Pepper, finely diced
250g Strawberries, hulled and diced small
Method:
Mix all salsa ingredients, except strawberries, cover and chill for one hour.
Add strawberries just before serving
Sauce:
1 tbs Butter
1 tsp Beerenberg Crushed Garlic
1 tbs Beerenberg Australian Honey
1 tbs sweet Soy Sauce
2 tsp Dijon Mustard
2 tbsp fresh Lemon Juice
Method:
Combine all ingredients in small saucepan, simmer 2 minutes and set aside.
Heat a grill or heavy-based frypan.
When hot, brush the sauce over salmon.
Grill steaks about 3-4 minutes on each side.
Brush with sauce again after turning, and again when done.
Serve on a bed of mashed potatoes.
Top with a generous amount of Salsa.
