Honey Baklava Ice Cream Slice

Ingredients (Serves 8):

  • 5 pieces (300g) baklava

  • 150g dark chocolate

  • 1/3 cup Beerenberg Australian Honey

  • 1 litre good quality vanilla ice cream, softened

  • For the Sauce

  • 50g unsalted butter

  • 2 tbs brandy

  • 1 cup brown sugar

  • 1/2 cup cream

  • 2 star anise


Method:

  1. Roughly chop baklava and chocolate. Place in a bowl along with the ice cream. Pour half the mixture into a lined terrine mould. Drizzle over the honey. Pour over the remaining ice cream. Refrigerate for 4 hours or until firm.

  2. Place butter, brandy, brown sugar, cream and star anise in a small saucepan. Cook over low heat until butter has melted. Simmer until thick. Cool slightly.

  3. Cut ice cream into slices and serve with the slice.
