Jam Filled Muffins

Ingredients:

  • 1 1/2 cups plain flour

  • 1/4 cup castor sugar

  • 2 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • 1/4 cup butter

  • 200g plain yoghurt

  • 1/4 cup buttermilk

  • 1 egg

  • Beerenberg Jam - your favourite flavour


Method:

  1. Blend dry ingredients.

  2. Melt butter, stir in yoghurt, buttermilk and egg.

  3. Add to dry ingredients. Mix lightly.

  4. Half fill muffin pans with mixture.

  5. Place a teaspoon of jam on top and then fill with remaining mixture.

  6. Bake in a moderate oven for 20 minutes.
