Jam Filled Muffins
Ingredients:
1 1/2 cups plain flour
1/4 cup castor sugar
2 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 cup butter
200g plain yoghurt
1/4 cup buttermilk
1 egg
Beerenberg Jam - your favourite flavour
Method:
Blend dry ingredients.
Melt butter, stir in yoghurt, buttermilk and egg.
Add to dry ingredients. Mix lightly.
Half fill muffin pans with mixture.
Place a teaspoon of jam on top and then fill with remaining mixture.
Bake in a moderate oven for 20 minutes.
