Jam Hearts

Ingredients:

  • 185g butter

  • 1 cup caster sugar

  • 1 1/2 tsp vanilla extract

  • 2 1/2 cups plain flour

  • 1egg

  • 1 egg yolk, extra

  • 1 tbs water

  • 1/3 cup Beerenberg Jam (your choice)

 

Method:

  1. Process butter, sugar and vanilla extract in a food processor until smooth. Add the egg and extra egg yolk and water and process to form smooth dough.

  2. Transfer dough to a lightly floured surface and knead lightly. Wrap in plastic wrap and refrigerate for 30 minutes.

  3. Preheat oven to 180C. Roll out dough on sheets of non-stick baking paper to 5mm thick. Cut into heart shapes using a 7.5cm cutter, and then cut a smaller 4cm shape out of the larger heart shapes.

  4. Place on baking trays lined with non-stick baking paper and cook for 10 to 12 minutes or until golden. Allow to cool on wire racks.

  5. Spread solid heart cookies with a teaspoon of jam and sandwich together with larger cookies.
