Jam Hearts
Ingredients:
185g butter
1 cup caster sugar
1 1/2 tsp vanilla extract
2 1/2 cups plain flour
1egg
1 egg yolk, extra
1 tbs water
1/3 cup Beerenberg Jam (your choice)
Method:
Process butter, sugar and vanilla extract in a food processor until smooth. Add the egg and extra egg yolk and water and process to form smooth dough.
Transfer dough to a lightly floured surface and knead lightly. Wrap in plastic wrap and refrigerate for 30 minutes.
Preheat oven to 180C. Roll out dough on sheets of non-stick baking paper to 5mm thick. Cut into heart shapes using a 7.5cm cutter, and then cut a smaller 4cm shape out of the larger heart shapes.
Place on baking trays lined with non-stick baking paper and cook for 10 to 12 minutes or until golden. Allow to cool on wire racks.
Spread solid heart cookies with a teaspoon of jam and sandwich together with larger cookies.
