Marmalade & Sweet Chilli Chicken

Ingredients (Serves 4):

  • 1 tbs Beerenberg Extra Virgin Olive Oil

  • 500-600g skinless chicken thigh fillets

  • 1 tsp chicken stock powder

  • 1/4 cup Beerenberg Orange Marmalade

  • 2 tbs Beerenberg Sweet Chilli Relish

  • Steamed sugarsnap peas or baby green beans, to serve

  • 1 1/4 cups rice, cooked, to serve


Method:

  1. Heat the oil in a large frying pan over moderate heat. Cook chicken in batches, 3-4 minutes each side until golden. Return all chicken to pan.

  2. Season with salt and black pepper. Sprinkle with stock powder. Add 1 cup water, the marmalade and chilli relish and mix to combine. Simmer 5 minutes. Remove chicken to a plate. Keep warm.

  3. Simmer liquid 5 minutes until thickened to a syrupy sauce. Serve chicken and peas over rice with the sauce and a green salad.
