Moroccan Chicken Kebabs

Ingredients (Serves 4):

  • 500g chicken tenderloins

  • Grated zest and juice of 1 lemon

  • 1 tbs Beerenberg Extra Virgin Olive Oil

  • 1 tsp Beerenberg Crushed Garlic

  • 1 tsp paprika

  • 1 tsp dried mixed herbs

  • 1/2 tsp ground cumin

  • 1 cup couscous, prepared as per packet directions

  • 1/3 cup chopped mixed flat-leaf parsley and mint

  • 3-4 tbs dried cranberries

  • Greek-style yoghurt and lemon wedges, to serve


Method:

  1. Place chicken in a bowl. Add lemon, oil, garlic, paprika, herbs and cumin. Combine. Marinate 15 minutes. Thread chicken strips lengthwise onto 8 soaked skewers. Cook for 2-3 minutes on each side until cooked.

  2. Combine prepared couscous with fresh herbs and fruit. Season with salt and black pepper. Serve the skewers on couscous with yoghurt and lemon wedges.
