Moroccan Chicken Kebabs
Ingredients (Serves 4):
500g chicken tenderloins
Grated zest and juice of 1 lemon
1 tbs Beerenberg Extra Virgin Olive Oil
1 tsp Beerenberg Crushed Garlic
1 tsp paprika
1 tsp dried mixed herbs
1/2 tsp ground cumin
1 cup couscous, prepared as per packet directions
1/3 cup chopped mixed flat-leaf parsley and mint
3-4 tbs dried cranberries
Greek-style yoghurt and lemon wedges, to serve
Method:
Place chicken in a bowl. Add lemon, oil, garlic, paprika, herbs and cumin. Combine. Marinate 15 minutes. Thread chicken strips lengthwise onto 8 soaked skewers. Cook for 2-3 minutes on each side until cooked.
Combine prepared couscous with fresh herbs and fruit. Season with salt and black pepper. Serve the skewers on couscous with yoghurt and lemon wedges.
