Nachos Beerenberg Style

Ingredients:

  • 400g beef or chicken mince

  • 1/2 tsp salt

  • 1 tsp cumin

  • 2 x Beerenberg Hot Chillies

  • 1 can refried beans

  • 1/2 pkt taco seasoning mix

  • 1 medium onion, sliced

  • 2 cups of cheese

  • 2/3 cup Beerenberg Tomato Chutney

  • Corn chips, to serve


Method:

  1. Heat a frypan to medium-high and brown meat and onions. Drain well.

  2. Return meat and onions to pan and add cumin. Cook, mixing well.

  3. In a large mixing bowl combine the refried beans and taco seasoning. Add grated cheese to bean mixture.

  4. Spread refried bean mixture in a shallow bowl approximately 12" in diameter. Cover bean mixture with browned meat and onions. Sprinkle chopped chillies evenly over meat mixture. Top with grated cheese.

  5. Bake uncovered in a 200C oven for 20-30 minutes or until heated through and cheese is melted.

  6. Place corn chips around the edge and garnish with Tomato Chutney.
