Nachos Beerenberg Style
Ingredients:
400g beef or chicken mince
1/2 tsp salt
1 tsp cumin
2 x Beerenberg Hot Chillies
1 can refried beans
1/2 pkt taco seasoning mix
1 medium onion, sliced
2 cups of cheese
2/3 cup Beerenberg Tomato Chutney
Corn chips, to serve
Method:
Heat a frypan to medium-high and brown meat and onions. Drain well.
Return meat and onions to pan and add cumin. Cook, mixing well.
In a large mixing bowl combine the refried beans and taco seasoning. Add grated cheese to bean mixture.
Spread refried bean mixture in a shallow bowl approximately 12" in diameter. Cover bean mixture with browned meat and onions. Sprinkle chopped chillies evenly over meat mixture. Top with grated cheese.
Bake uncovered in a 200C oven for 20-30 minutes or until heated through and cheese is melted.
Place corn chips around the edge and garnish with Tomato Chutney.
