Oriental Chicken Salad

Ingredients (Serves 4):

  • 4 chicken breasts

  • 1/2 head Romaine lettuce

  • 1 tsp Beerenberg Crushed Garlic

  • Dash of lemon pepper

  • Dressing

  • 1/4 cup Beerenberg Extra Virgin Olive Oil

  • 30ml dark sesame oil

  • 1/2 tbs soy sauce

  • Juice of 1/2 lemon

  • 1 tbs Beerenberg Australian Honey

  • 1/2 tbs peanut oil

 

Method:

  1. Grill the chicken breasts until done. Cut into fine strips julienne style.

  2. Shred Romaine lettuce into bite sized pieces and place on salad dishes.

  3. Place the chicken strips crosshatched over the beds of lettuce, and serve with a ramekin of the dressing placed in the middle of the plate with your choice of garnish.

  4. Combine the dressing ingredients and whisk thoroughly. Mix with sesame seeds.

  5. Lightly season the salads with  garlic and a dash of lemon pepper and pour a moderate amount of dressing over the top. Fill ramekins with the remaining dressing, which is meant for dipping the chicken strips. Sprinkle moderate amounts of sesame seeds over the top, and garnish.
