Pineapple Lamb Stir-Fry
Ingredients (Serves 4):
440g can pineapple pieces
600g noodles
1 tbs Beerenberg Extra Virgin Olive Oil
2 tsp sesame oil
2 tsp crushed garlic
1 large onion, thinly sliced
300g lamb, sliced into bite size strips
3 cups stir-fry vegetables
2 tbs oyster sauce
1 tbs soy sauce
Beerenberg Sweet Chilli Relish, to taste
Fresh coriander, roughly chopped
Method:
Cook noodles according to packet instructions, stand aside.
Heat oils together in a large wok. Over medium heat, saute garlic and onion for 2-3 minutes.
Turn heat up to high, add lamb and cook for 3 minutes. Add vegetables and pineapple and cook for a further 2 minutes or until tender.
Add all sauces and noodles. Stir until heated through.
Sprinkle with coriander and serve immediately.
