Pineapple Lamb Stir-Fry

Ingredients (Serves 4):

  • 440g can pineapple pieces

  • 600g noodles

  • 1 tbs Beerenberg Extra Virgin Olive Oil

  • 2 tsp sesame oil

  • 2 tsp crushed garlic

  • 1 large onion, thinly sliced

  • 300g lamb, sliced into bite size strips

  • 3 cups stir-fry vegetables

  • 2 tbs oyster sauce

  • 1 tbs soy sauce

  • Beerenberg Sweet Chilli Relish, to taste

  • Fresh coriander, roughly chopped


Method:

  1. Cook noodles according to packet instructions, stand aside.

  2. Heat oils together in a large wok. Over medium heat, saute garlic and onion for 2-3 minutes.

  3. Turn heat up to high, add lamb and cook for 3 minutes. Add vegetables and pineapple and cook for a further 2 minutes or until tender.

  4. Add all sauces and noodles. Stir until heated through.

  5. Sprinkle with coriander and serve immediately.
