Pork Loin Cutlets with Capsicum Relish

Ingredients (Serves 4):

  • 1 tbs balsamic vinegar

  • 1 tsp Beerenberg Crushed Garlic

  • Finely chopped fresh parsley

  • 3/4 cup Beerenberg Tomato Sauce

  • 1 thinly sliced large red and yellow capsicum

  • 1 thinly sliced large red onion

  • 4 pork loin cutlets

  • 2 tbs Beerenberg Extra Virgin Olive Oil

  • 1 seeded and chopped small red chilli

 

Method:

  1. Heat the olive oil in a fry pan then add the capsicums, garlic, chilli and onion and cook for 10 minutes or until capsicum is soft. Add balsamic vinegar and Tomato Sauce, stir for 1 minute and set aside.

  2. Meanwhile, brush the pork loin cutlets on both sides with a little oil. Cook on BBQ or char grill plate. Cook the cutlets over a medium heat for 6 minutes on each side, until medium done and juices run clear. Do not overcook pork.

  3. Spoon the capsicum relish into the centre of serving plates and top with the pork cutlets. Allow the pork to rest for a few minutes before serving with Relish. Enjoy with a mixed green salad.
