Raspberry Coconut Slice
Ingredients:
3 ounces butter
1/4 cup sugar
1 egg
3/4 cup plain flour
2 tbs cornflour
3 tbs Beerenberg Raspberry Jam
Topping
2 tbs butter
2 tbs sugar
2 tbs self-raising flour
1/2 tsp vanilla
1 egg
1 1/2 cups coconut
Method:
Cream butter and sugar. Add egg and beat well.
Sift flours, fold into mix.
Spread mix evenly into a greased 7x11" baking tin.
Spread jam over mixture in tin.
Topping: Cream butter, sugar and vanilla. Add egg and beat well. Fold in sifted flour and coconut. Spread topping over jam. Bake at 375F for 25 minutes or until golden. Cut into slices when cool.
