Smoky Bourbon Steak Sandwich
Ingredients (Serves 4):
4 focaccia
Marinated eggplant
Semi-dried tomatoes
Salad greens
Bunch fresh basil chopped
Beerenberg Extra Virgin Olive Oil
4 pce scotch fillet steak
Beerenberg Smoky Bourbon Marinade
Method:
Marinade the scotch fillet steak in half a bottle of Smoky Bourbon marinade for at least half an hour prior to cooking.
Cut the focaccia in half and place salad greens on the base of each focaccia.
Mix the chopped basil with the drained eggplant and semi-dried tomatoes and place a generous spoonful of the mix onto the salad greens.
Heat oil in a hot pan and cook the steak for approx 3 minutes on each side (medium).
Place the steak on top of the salad, sprinkle with salt and a good splash of Smoky Bourbon Marinade, top with remaining focaccia.
