Strawberry Ice
Ingredients (Serves 6-8):
1 punnet Beerenberg strawberries, hulled and rinsed
2 tspns gelatine
2 tbs boiling water
1 x 200g carton natural yoghurt
2 egg whites
1/4 cup castor sugar
Method:
Thoroughly dissolve gelatine in boiling water. Place into a blender with strawberries and vitamise till smooth. Add yoghurt and blend again till thoroughly combined. Pour into a large shallow dish or plastic ice cream container. Chill in freezer till a 2cm border of ice crystals forms around the edge. Beat mixture with a fork to break up ice crystals.
In a clean dry bowl, beat egg whites till soft peaks form. Gradually add sugar and beat to a firm meringue. Carefully fold into strawberry mixture.
Freeze for several hours until just firm. Spoon into chilled serving bowls. Decorate with fresh strawberries.
