Strawberry Sauce
Ingredients:
1 punnet Beerenberg strawberries
3 egg yolks
3 tbs sugar
1/4 cup water
1/2 tsp strawberry extract
Method:
Wash, hull and slice strawberries and puree in blender.
In top of double boiler, mix egg yolks, sugar, water and strawberry puree.
Cook, stirring, over hot water until thickened and foamy. Flavour with 1/2 teaspoon of strawberry extract; chill.
If too pale, colour with a few drops of red food colouring, if desired.
