Sweet Potato Fritters
Ingredients (Makes 8):
400g sweet potato
2 zucchini
1/4 cup wholemeal flour
1/2 tsp ground ginger
1 egg
2 tbs Beerenberg Sweet Chilli Relish
4 rashers shortcut bacon
2 tbs Beerenberg Extra Virgin Olive Oil
1 avocado, sliced
Method:
Peel sweet potato and shred or coarsely grate into a bowl. Shred or grate zucchini and add to bowl with flour, ginger, egg and sweet chilli relish. Mix together.
Fry bacon in a non-stick fry pan until crisp. Transfer to a plate lined with paper towel and keep warm.
Add oil to pan and heat over medium heat. Place large spoonfuls of the fritter mixture into pan and flatten out slightly. Fry for 2 minutes each side, until golden and crisp. Remove from pan and place 2 fritters onto each serving plate.
Top fritters with bacon and avocado. Serve warm.
