Thai Grilled Pineapple & Chicken Salad
Ingredients (Serves 4):
400g pineapple, fresh or canned
2 large chicken breasts, halved
2 tsp crushed garlic
60g butter, melted
1/2 cup brown sugar
2 tbs Beerenberg Sweet Chilli Relish
3 cups mesclun mix
1 cup fresh coriander
1/2 punnet cherry tomatoes
1 red onion, sliced
Dressing
1/4 cup lime juice
2 tbs grated lime zest
1/2 cup coriander root, washed and finely chopped
1/2 cup Beerenberg Sweet Chilli Relish
1/2 cup Beerenberg Extra Virgin Olive Oil
Method:
For the dressing, combine all ingredients in a jar and shake well to combine.
Combine the garlic, melted butter, sugar and chilli relish and brush over the pineapple and chicken.
BBQ, grill or pan-fry the pineapple and chicken until golden brown and the chicken is cooked.
Slice the chicken crosswise into large pieces, and cut the pineapple into chunks.
Arrange the salad greens, coriander leaves, cherry tomatoes and red onion onto a platter or individual serving plates.
Scatter the pineapple and chicken over the salad greens, and drizzle with the dressing just before serving.
