Tuna & Crisp Noodle Salad

Ingredients (Serves 4):

  • 1/4 Chinese or savoy cabbage, finely shredded

  • 1 small red onion, halved and thinly sliced

  • 1 carrot, cut into thin matchsticks

  • 1 red capsicum, thinly sliced into matchsticks

  • 1 cup fresh bean sprouts or snow pea shoots, rinsed

  • 1/4 cup coriander leaves

  • 2 x 185g cans tuna in spring water, drained and flaked

  • 100g pkt Chinese noodles

  • Lime wedges, to serve

  • Sweet Chilli Dressing

  • 1/4 cup peanut or vegetable oil

  • 1/4 cup Beerenberg Sweet Chilli Relish

  • Juice of 2 limes

  • 1 tbs soy sauce


Method:

  1. Prepare Sweet Chilli Dressing: Combine all ingredients in a bowl and whisk to combine. Season to taste with black pepper.

  2. Combine cabbage, onion, carrot capsicum, sprouts and coriander in a large bowl. Just before serving, add tuna, noodles and dressing. Toss lightly to combine. Serve immediately.
