Tuna & Crisp Noodle Salad
Ingredients (Serves 4):
1/4 Chinese or savoy cabbage, finely shredded
1 small red onion, halved and thinly sliced
1 carrot, cut into thin matchsticks
1 red capsicum, thinly sliced into matchsticks
1 cup fresh bean sprouts or snow pea shoots, rinsed
1/4 cup coriander leaves
2 x 185g cans tuna in spring water, drained and flaked
100g pkt Chinese noodles
Lime wedges, to serve
Sweet Chilli Dressing
1/4 cup peanut or vegetable oil
1/4 cup Beerenberg Sweet Chilli Relish
Juice of 2 limes
1 tbs soy sauce
Method:
Prepare Sweet Chilli Dressing: Combine all ingredients in a bowl and whisk to combine. Season to taste with black pepper.
Combine cabbage, onion, carrot capsicum, sprouts and coriander in a large bowl. Just before serving, add tuna, noodles and dressing. Toss lightly to combine. Serve immediately.
