Twice-cooked Pork with Apple
Ingredients (Serves 10):
1kg boned skinned pork belly
1 tbs vegetable oil
1 large green apple
1/4 cup Beerenberg Plum Sauce
1 tbs char sui sauce
1 tbs soy sauce
Method:
Preheat oven to moderately hot, 200C.
Place pork on wire rack in medium baking dish; rub oil all over pork. Roast pork, uncovered, about 1 hour and 20 minutes or until cooked s desired. Cut pork into 2cm squares.
Meanwhile, core unpeeled apple; cut into 36 similar sized pieces.
Heat wok, add sauces and pork, and stir-fry until sauce caramelises. Remove pork; add apple to wok, toss apple to coat in sauce.
Skewer one piece of apple and one piece of pork on each toothpick.
