Two Fruits with Marmalade Custard

Ingredients (Serves 2):

  • 2 tbs custard powder

  • 2 cups milk

  • 2 tbs Beerenberg Orange Marmalade

  • 4 Swiss jam rollettes, each cut into 4 slices

  • 1 x 425g can two fruits in natural juice, drained, reserving syrup

  • 1/3 cup toasted muesli


Method:

  1. Combine custard powder with half a cup of the milk to make a smooth paste. Place custard powder mixture in a heavy-based saucepan. Add the remaining milk and marmalade, and cook, whisking over medium heat, until thickened. Allow to cool slightly.

  2. In four high-ball or parfait glasses layer jam rollette slices, two fruits and custard, moistening jam rollette with a little reserved syrup while layering.

  3. Finish with a custard layer, and sprinkle with muesli. Refrigerate until chilled.
