Veggie Burgers
Ingredients (Serves 4-6):
1 can chickpeas (drained)
1/2 a sweet potato, grated
1/2 a zucchini, grated
1/2 an onion, grated
1 medium carrot, grated
1 tsp curry powder
2 vegetable stock cubes
1 egg
3/4 cup breadcrumbs
Beerenberg Extra Virgin Olive Oil for frying
Sweet Chilli Dressing
3 tbs Beerenberg Sweet Chilli Relish
4 tbs Beerenberg Ranch Dressing
Method:
Roughly chop chickpeas, place in bowl with potato, zucchini, onion, carrot, curry powder, stock cubes, egg and breadcrumbs and mix well.
Let stand for 10 minutes to let flavours infuse.
Divide into six and shape into patties, fry on low heat or until patties are browned adn cooked through.
Mix the Sweet Chilli Relish and Ranch Dressing together.
